Today starts my (umpteenth) health journey. So, what makes me think that creating a Blog, putting it out there, and writing about it all will mean success? I don’t know. I think it helps to have accountability… and even if I’m the only person reading my Blog, it’s “out there”… I’m accounting for my choices.

Today was a Sunday. A good day to start. I did some meditation. I cooked healthy food. I did chores. I had a FaceTime with some college roommates that was delightful and such a treat! Overall, it was a good day one. Did I weigh myself… ooops… no, no I did not. I will do that tomorrow morning. Doubt I’ll put the number “out there”, but I will have the jumping off point, and an idea of how far i have to go.

I intermittent fasted for 15.5 hours. Which is good for day one. The two hour catch up session with the college roommates helped with that, and suddenly it was afternoon and i hadn’t had anything but water and black coffee.

So what did I eat on day one? Breakfast - black coffee. I had 2.5 cups over the morning.

Lunch - which I ate about 1:15 was lean ground beef/pinto beans/brown rice, romaine/spinach salad, salsa (2 Tbs), half an avocado, and cherry tomatoes. It was really good, and really filling. And it was minimally processed food.

Dinner was shrimp sautéed in some olive oil, a small baked potato, the other half of the avocado, cherry tomatoes, and broccoli. Some cocktail sauce (no sugar added ketchup with my addition of horseradish).

Simple and Tasty!

I’ve had about 70 oz of water plus the coffee.

So a good first day. Room for improvement, but it was not a day where i dove headfirst into all the food. Go me.
